Fouace, village dishes and markets nearby.

Les Gardes/Journal/Local flavours

In Najac, local food is found at the bakery as well as among the Sunday market stalls. Orange-blossom fouace and astet najacois belong to the village’s food traditions. Nearby markets introduce the cheeses, cured meats and seasonal produce of the wider Aveyron.

Fouace, a speciality of Najac

This soft brioche scented with orange blossom has a particular place in the village. Local bakers make it, and Najac even has a festival devoted to it. It is among the specialities associated with Najac by Aveyron’s tourism organisation.

Fouace belongs to the Aveyron’s tradition of brioche-style cakes. Its scent and soft texture make it an easy introduction to village food, found at local village bakeries.

Astet najacois

Astet is a pork roast stuffed with garlic and parsley, associated with Najac. Alongside the sweet fouace, it represents another part of the village’s food culture and the traditional recipes of western Aveyron.

Aligot and the wider Aveyron

Aligot comes from the Aubrac and combines potatoes with fresh tome cheese to create its characteristic stretchy texture. It belongs to northern Aveyron rather than being specific to Najac. The regional specialities of the Aveyron reflect the differences between the department’s landscapes and traditions.

Markets near Najac

Markets bring together producers and traders with cheeses, breads, cured meats and seasonal harvests. These are the main weekly markets in our surroundings:

Other villages, including Cordes-sur-Ciel and Laguépie, also hold markets where local produce can be discovered during summer:

They are places to discover local produce, buy it and taste it at some of the stalls. The tourist office’s market calendar also lists seasonal markets. Najac’s Wednesday evening markets in summer include food prepared by local producers.

The villages behind the food
